always looking for "fill in" staff to hold the fort while a

Read the local newspapers for the details of training
companies. If the bar you work in has slot machines (poker
machines, one-armed bandits) then you may have to do a similar
course for a certificate for responsible Gambling service as
well. It's a pain, but it's the law.
